SAMPLE RECIPE: Avocado Toast with Egg

This meal is a great balance of protein, healthy fats, and carbs. Avocado toast seems to be trending, and with good reason: It’s not just easy; it’s delicious.

In a medium skillet, melt the butter over medium heat. Crack the egg into the skillet, and cook for about 2 minutes, or until the egg white turns opaque. Using a turner spatula, flip the egg, and cook for 2 to 5 minutes, or until the yolk is done to your liking. Remove from the heat.

In a medium mixing bowl, use a fork to mash the avocado. Stir in the lemon juice, salt, and pepper.

Toast the bread in a toaster to your desired crispiness. Spread the avocado on the toast, and top with the egg.
