Cajun-Stuffed peppers make for a wonderful, easy meal with just 5 main ingredients.

1. Preheat the oven to 400°F. Have a baking dish ready.

2. Place the bell pepper shells in the baking dish.

3. In a skillet over medium-high heat, warm the olive oil. Add the garlic and cook until it becomes fragrant. Add the mushrooms, cauliflower, chopped bell pepper tops, and the Cajun Seasoning, and cook for 8 to 10 minutes. Season with salt and pepper. Remove from heat and allow to cool for 10 minutes.

4. Add the Pepper Jack cheese to the mixture and mix well.

5. Fill each bell pepper with the vegetable and cheese mixture and bake for 15 to 20 minutes, or until the peppers are browned and the cheese is melted.

Tasty variation tip:

Make this an Italian dish by replacing the Cajun Seasoning with your favorite Italian seasoning blend and using mozzarella instead of Pepper Jack cheese. Make this a Greek dish by replacing the seasoning with a Greek blend and using Feta instead of Pepper Jack.

Sample Recipe: Baked Potatoes with Avocado Pico de Gallo

SERVES 6 • PREP TIME: 5 MINUTES COOK TIME: 8 HOURS

Directions:

1. Scrub the potatoes thoroughly and dry with paper towels. Pierce each with a fork in several places. Rub them with olive oil. Wrap each potato tightly in aluminum foil. Put the potatoes in the slow cooker.

2. Cover and cook on low for 8 hours, or until the potatoes are tender when pierced with a fork. Remove the wrapped potatoes from the slow cooker, cover with a towel to keep warm, and set aside.

3. To prepare the pico de gallo, in a medium bowl, gently stir together the onion, tomatoes, cilantro, and avocado. Season with salt and pepper.

4. Unwrap each potato and halve lengthwise. Fluff the potato flesh with a fork. Top each potato with a generous portion of pico de gallo and serve.

Apricot-Braised Lamb Chops from Five Ingredients or Less Slow Cooker Cookbook

Serves 4

Directions

Use a 4-quart slow cooker. Place the lamb chops in the insert. In a small mixing bowl, combine the apricots, chopped garlic, and mustard. Spread this sauce on all sides of the chops using a large spoon. Pour in the red wine.

Cover and cook on Low for 7 to 8 hours or on High for about 5 hours.

The Verdict
